Hanoi specialty for Tet: candied lotus seed

The Hanoitimes – Tet provides an excellent opportunity for visitors to sample some of Vietnam’s more exotic culinary creations.

A long, narrow country, stretching for more than 2000 kilometers from north to south and compassing a vast range of social and cultural groups, Vietnam is home to a stunning variety of cuisines.

One of most treasured Hanoian specialties- candied lotus seed or Mut sen. These Hanoian’s jams for Tet are prapared by Pham Mai Anh.

A recently published cookbook has listed some 555 Vietnamese dishes, although experts say this may represent just one-tenth of the recipes on the nation’s menu. Vietnamese gastronomy is highly localized, with its distinct styles centered in different regions and vast differences in tastes and style to be experienced as the visitor travels throughout the country.

Although each region’s particular cuisine has its own claim to fame, Hanoian cooking has long been considered one of the nation’s oldest and purist culinary styles.

Tet or Vietnamese Lunar New Year festival is a wonderful time to experience some of the most treasured Hanoian specialties and there is one particular taste-treat that many find beyond compare – the delicate flavour of the candied lotus seed or Mut sen, a special dessert considered to have both practical and spiritual benefits.

Candied lotus is made only with carefully selected pink lotus seeds. Although the pink lotus is grown all over Vietnam, not all produce top-quality seeds. It is the round seeds of the flower grown in Hanoi and northern provinces of Ha Nam, Hai Duong, Hung Yen and Ninh Binh, which are preferred for the production of this specialty.

It can be difficult for the consumer to distinguish lotus candy made from selected northern seeds from lower quality products simply through packaging, and ultimately a taste test is the only way to differentiate between a specialty candy and a common sweet.

Northern Mut Sen should be delicately scented, with unmistakable crumbly texture that distinguishes it from lesser rivals.

There are two types of lotus seed candy- plain and sugar-coasted. The plain variety (with the sugar soaked into the seed itself) is more highly valued than the coated type and will cost the connoisseur two or three times as much.

Traditionally, the best place to buy candied lotus seed is in Hanoi’s Hang Dieu street. The candy is thought to bring a swag of benefits to those who eat it, including longer life expectancy, improved and controlled temper, as well as helping to build-up life-sustaining elements and calming the troubled mind.

It is no wonder then that the sweet is highly regarded among Vietnamese and is even used as a precious votive offering.

Although in the modern, obesity – conscious world, sugary treats may have lost some of their popularity, there’s no denying the satisfaction of trying this Tet specialty alongside a cup of traditional-style lotus tea around a table in the company of good friends.

Try it for the sake of tradition- although be warned, one may not be enough.

The candied ginger made in Kim Long ward, Hue city, in the central province of Thua Thien-Hue, stands out for its authenticity and absence of additives.

The specialty is muchly consumed during Lunar New Year (Tet) festival.

Kim Long ward is the only place in the ancient capital city that retains the profession of making candied ginger in the last days of the lunar calendar.

The famous Kim Long Candied Ginger in Hue has a distinct spicy flavor. The ginger can neither be too old because the final product will not have a smooth texture, nor can it be too young, because it will not have the needed pungency.

What makes the Kim Long candied ginger special is that every step is done by hand, and it has no other ingredient except ginger and sugar – no additive is used. Regular buyers love the Kim Long candied ginger for its pure spicy-sweet flavor.

Currently, the Kim Long Ward has about 20 households making the ginger jam in the most traditional way.

Besides serving locals during the Tet holiday, Kim Long candied ginger is also ordered year-round by dealers from cities across central Vietnam and Ho Chi Minh City./.VNA

Every bit of the coconut fruit is used, nothing goes to waste: shell, fiber and flesh are used for different products.

Going nuts : Scooping the coconut flesh without breaking the shell is also a special skill, allowing the latter to be used for both functional (ladles, etc) and artistic (lacquered bowls) purposes.

Candies: Candy factories use the coconut flesh and add different flavors to make coconut caramel candy for example.

Sweet something: A lot of flavored candies are made using the coconut flesh. Typically they are wrapped in a transparent rice paper that can be eaten.

Covid-19 travel fears, promotions keep sales buzzing at Saigon Co-op’s supermarkets

Amid the unpredictability of the Covid-19 epidemic, people are not travelling much during the Lunar New Year holidays, and are instead stocking food for family gatherings.

Sales of confectionery and fresh foods at Saigon Co-op’s retail systems have increased by 20 per cent on average year-on-year.

Sales of seafood like shrimp, marine fish and squid are up 20 per cent, those of poultry meats such as chicken and duck, pork and beef have increased by 10-25 per cent and those of beer and soft drinks by 5 – 10 per cent.

Currently, the retailer is offering sharp discounts on several products.

Cashew nut, almond, melon seed, sugar-coated ginger, young coconut and lotus seeds, raisin, and candy prices are discounted by VND10,000 to VND50,000 a box on average.

Some varieties of cakes with eye-catching designs that are suitable for gifting or offering at the family altar are discounted by VND8,000-33,000 a box.

Juices and beers also carry attractive discounts.

A 750ml bottle of Patritti sparkling dark/golden grape juice/ apple juice costs VND103,500, a pack of 6x390ml Pepsi/ 7Up/ Mirinda orange costs VND31,300, a Vfresh orange juice 1l costs VND31,000, Sapporo Premium beer costs VND15,500 a can and VND349,000 for a pack of 24 cans, and a set of 3l bottle of Passion red wine 13.5 per cent and a shelf to contain the wine costs VND699,000.

Fashion products for Tet, including shirts, t-shirts, jackets, jeans, premium women’s clothes, children’s fashion and modern ao dai, have their prices cut by 20 – 30 per cent on average.

Household utensils and home decoration items have the highest discounts.

For example, some rice cookers are discounted by 50 per cent, L&L round-shaped glass containers by 50 per cent, some superfast boiling kettles by 40 per cent, and clothes by 20- 40 per cent.

Ho Thi Hong Đao, deputy marketing director of Saigon Co.op, said from now until New Year Eve (February 11), Saigon Co-op would offer further discounts on pork, processed pork and chicken, vegetables, and especially fruits and specialities offered to ancestors at its Co.opmart, Co.opXtra and Co.op Food stores. — VNS

Amid socio-economic development, traditional food is still kept and enjoyed. In addition, there has been renovation and creativity based on the tradition for new delicious dishes that are welcome. Banh Chung (traditional rice cake made of glutinous rice, green bean and pork), a symbol of food during Tet (Lunar New Year Festival) is one of them.

Brown rice Banh Chung

“No fat” is the attractive marketing of brown rice Banh Chung for which many people “hunt” for it this Tet. Made in the same way of making traditional banh chung, the only difference of this cake is brown rice, instead of the traditional white one.

Brown rice not only brings a new brown color to the traditional green cake but also contains substances good for health, suitable for those with diet, diabetes or problem with heart and blood pressure.

It is soon favored by diners as people can both enjoy the traditional food and eat healthy. Furthermore, many people are also interested in purchasing to taste the new flavour of the cake.

The order of the cake increases day by day as Tet arrives closer and closer. Some places are in the shortage of supply.

Salmon Banh Chung

It is the first-ever Tet traditional rice cake with fish, instead of pork as usual.

Moreover, it is salmon, which is usually known for its imported origin, bringing a touch of international exchange and culinary combination in the cake. It is also considered the most expensive Banh Chung with VND500,000-600,000 ($22-26) a pair while the average price of traditional Banh Chung varies among VND55,000-100,000 ($2.5-4.5)

Along with traditional ingredients such as white glutinous rice, green bean, pepper and la dong (Phrynium leaves), green tea powder is also added to reduce the strong smell of fish. It has caught the attention and curiosity of many people to taste and present to others as a unique gift.

Five-color Banh Chung

This is exactly the same ingredients of traditional Banh Chung, except for its multi-color. It includes five separate layers of colors representing earth, water, fire, wood and metal which are believed to bring peace, prosperity and luck for the New Year in Oriental culture.

Depending on the taste of the maker, the five colors of the cake are varied. However, the most common ones include red, green, yellow, white and purple. To create the different colors of the cake, rice should be dyed, with natural ingredients, for example, the red coming from Gac (perennial melon), yellow from ginger or purple from black rice.

To prevent the colors from mixing together when the rice is wrapped in the leaf, the cook dyes the rice separately in five moulds, thus the elaboration of this Banh Chung is more time consuming.

Young green rice Banh Chung

Having the same look as a traditional Banh Chung, but Banh Chung Com has a different soft and unique taste, thanks to the addition of com (young green rice), a typical delicious ingredient which is used a lot to just eat right away or to make glutinous rice cake, sticky rice, sweet desserts, candy, ice-cream, among others.

More interesting, Banh Chung Com has two kinds, salty as usual or sweet, which both come with meat, offering more options for diners.

Vegetarian Banh Chung

In the past when people were poor and short of food, especially meat, Tet was the occasion to feast and enjoy the food which came with meat. However today, as life is getting better and food is abundant, meat is no longer the dreamt food, especially for vegans whose number is on the rise.

Therefore, the vegetarian Banh Chung is an ideal choice for them to perform a Tet custom. Without meat, vegetarian Banh Chung is still tasty, thanks to the addition of a lot of fresh and delicious green ingredients such as mushroom, lotus, coconut, among others.
